We’re fans of this childhood favorite and have a few tricks that make it taste and feel all grown up. Chef Matthew let us in on some pro-tips to elevate your grilled cheese to the next level.

  1. Spread room temperature butter onto the bread, edge to edge and season with salt.
  2. Start in a cold pan, cast iron is best, and never on high. Flip the switch to a nice, medium heat.
  3. If you’re adding in extra’s like cider onions, or bacon and avocado, put a layer of cheese next to each slice of bread.
  4. Rotate bread throughout cooking.
  5. Let the sandwich REST before cutting.
